How to Make Pour-Over Coffee

Our pour over method, honed over years of experimentation, is a practice in patience and presence. No complicated machines, just a few simple tools, your hands, and a willingness to slow down. The ritual itself is quietly meditative. Watching the bloom as the coffee grounds swell, inhaling the first wisps of steam, tracing the spiral of water as it shapes flavor with each careful pour.

If you’ve never tried a pour over before, the resulting cup is delicate and layered. Brighter, more nuanced than a standard drip, yet comforting in its familiarity. For those already familiar, it’s a canvas for exploration. Each pour, each swirl, each moment of attention subtly shifts the final flavor. This is coffee at its most human. How We Do It - Pour Over Coffee

1. Heat your water
Bring fresh, filtered water to just below boiling ( about 200°F ) the sweet spot for a balanced extraction.

2. Measure your coffee & grind to perfection
Use 22-30 grams of coffee per cup. Grind your beans medium-coarse, not too fine and not too chunky.

3. Prep your filter
Add the grounds to your filter and give your dripper a gentle tap to level them out. Zero your scale and timer.

4. Pour with purpose
You’ll do four pours, totaling 350 grams of water. Begin each one from the center, spiraling slowly outward and back in again. Keep your kettle about 8–10 inches above the grounds for an even extraction. The first pour is where the magic begins. Pour three slow spirals out and three back in. The coffee will rise, that’s the bloom, releasing trapped carbon dioxide and unlocking flavor. At 40 seconds, start your next pour. Bring your total water weight to 150 grams, using five spirals out and five back in. The aroma will begin to deepen here. At 1:10, pour again until you reach 250 grams. This is where the sweetness starts to develop. At 1:40, begin your final pour to reach 350 grams total. Let the water flow through completely, revealing a clear, fragrant brew.

5. Sip and savor
Once the last drop has passed through, pour into your favorite mug. Take a breath. Notice the aroma, the warmth, the quiet joy of a cup made by hand.
